meat and Potato pies / cornish pasties - thats whats missing
treated Mrs RB to a real Northern Meat and Potato pie when we went to England. she was a convert

Anything with loads of chocolate, gooey and rich yummy!

Or a tasty carrot cake (with spices: ginger, cinammon & all spice) I made a vegan one of those for Halloween not a slice left at the party!

I didn't think you cooked?

I didn't frost mine I just did an orange sugar icing instead (with real juice from an orange not fake flavouring) It is quite a solid cake.


Ingredients needed:
2 cups grated carrots (this is actually 2 large carrots give or take)
1 1/2 cups raisins
2 cups water
1 1/2 tsp cinnamon (I also added a little bit of ground ginger to my cake)
1 1/2 tsp allspice
1/2 tsp cloves
1 cup sugar
1/2 tsp salt (I also left out the salt)
3 cups flour (If you use self raising as I did you don't need to add the baking soda)
1 1/2 tsp baking soda (not needed if using self raising flour)
1 cup soy milk
I also added a tablespoon of light olive oil to my cake as the mixture wasa bit too dry

Preparation:
Preheat the oven to 350 degrees.
In a medium sized saucepan, gently simmer the carrots, raisins, water, and spices for 8-10 minutes (I actually didn't bother simmering and I had already plonked all the ingredients into the bowl). Add the sugar and salt and allow to cook for 2 more minutes. Remove from heat and allow to cool completely.

In a large bowl, combine the flour and baking soda. Add the carrot mixture, along with the soy milk, and combine just until mixed.

Lightly grease a 9x9 inch baking pan and pour in the batter. Bake for 1 hour, or until a toothpick inserted in the center comes out clean. Frost with a vegan cream cheese frosting.

Funny you say that, we are doing a carrot cake and were talking about it last night so yours can be the guinea pig :) One birfday carrot cake coming up !

The recipes did not really sound appetizing at all so I gave the frosting a miss

Creamy Tofu Frosting Recipe
Ingredients:
1 pound soft (silken) tofu, patted dry
2 tbsp lemon juice
3-4 tablespoons powdered sugar
1/2 tsp vanilla
Preparation:
Place all the ingredients in a blender or food processor and puree until very smooth.

Vanilla Frosting
1 container Tofutti Better Than Cream Cheese - no idea where to buy this
1/2 cup soy margarine
2 cups powdered sugar
1 tsp vanilla extract
1 1/2 tsp lemon juice
Preparation:
Combine the cream cheese and margarine. Slowly add the powdered sugar, then vanilla and lemon juice.

Cheers, Bats - I can cook, don't cook! Baking is in my genes, and I love carrot cake. (esp PS Cafe's)

I would just leave off the gunk stuff - I scrape most of it off in cafes.

Just a thought: make good, reasonably priced sujee (sp?) cake and the locals will beat a path to your door, especially over Christmas.

Just making said carrot cake again but this time instead of
1 1/2 cups raisins

I have added 1 cup raisin and 1 cup walnuts - need a couple of more drops of water.

Lets see what happens when it is eaten later tonight.
