What makes it the "best"? http://www.yumcha.com.sg gets a lot of votes for its authenticity and weekend trolley service, if not its service with a smile.

Yum Cha is good - Din Tai Fung is also good, I think. Is Da Dong still going? It was up the road from Yum Cha. They're pretty good too.

Lao Beijing in Plaza Sing is also good.
edit: Shang Palace might be good if you want a posh one. I've never been.

The one at Rochester Park is Min Jiang - more Shanghainese/Sichuan than Cantonese. Not that you would be able to tell the difference
Ding Tai Fung is more dumplings dishes.
My fave is Royal China at Raffles Hotel and while you are there you may want to try the lobster noodles. Best in Singapore (even better than Majestic Hotel). Imperial at Ngee Ann City is god too.

Isn't there - or wasn't there - a Min Jiang at the Goodwood Park Hotel? Is it the same place at Rochester Park?

Yes, same name/owner. Min Jiang Goodwood has been around for some 20yrs. They do mainly traditional Sichuan food. I was there in June before just before they close. Or relocated. .

I like Crystal Jade Palace at Ngee Ann City, preferred their dim sum to Imperial. Price wise not too different.
Yum Cha is always good but can be hard to get a table on the weekends.
For a really nice dim sum lunch, go to the one at St Regis. Very, very nice and I was pleasantly surprised by the bill - not much more than Crystal Jade. Dishes are mostly only in sets of 2 though.
IMO, Crystal Jade has the best char siu bau and food is closest to what you get in Hong Kong.

Forgot about St Regis. Yes, it is nice there BUT don't go there if you ar epressed for time. Service is awfully slow and they persisted in serving course by course despite me telling them (after the third dish/course) to bring them all together.

Owen seafood restaurant has some awesome dim sum.
I live in the east but still make my way all the way to turf City to eat it ... and their salted egg crab is simply out of this world.

Din Tai Fung's xiaolongbaos are simply to-die-for...Might be a little pricey for some but the good service and super-delish XLB more than make up for it.
