I don't know a lot about Chinese cuisine, beyond what I like, but how about Chef Chan's new place at the National Museum? I haven't been, but it's had good reviews and I really enjoyed the Diners we did at his old place opposite Raffles.

The best I've had is in the Fullerton hotel, but i think the chef has changed since then.

It's no longer a Tung Lok restaurant. Not sure if that means it's better or worse, although we had a fabulous Sunday brunch there when it was Tung Lok. Neo kept them busy with the freeflow duck pancakes.
