I never quite appreciated how wonderful pork and sage were together. A pretty easy week night meal. He served it with roast potatoes with rosemary and brussel sprouts cooked in the fat from the crispy bacon (pancetta in this case) that he served them with - which lends support to the theory that bacon makes everything better!
