When you've finished using your espresso machine to make your morning coffee, why not make use of the steam wand to make quick scrambled eggs? Here's how to do it.
Ingredients:
- 1 or 2 eggs
- milk or cream
- pepper and salt
- 1 espresso machine
- Break the eggs onto a jar ( a straight-sided ceramic pitcher works best), add a bit of milk, add pepper to taste, then stir.
- Hold the jar or pitcher underneath the steamer wand and let the wand dip into the egg mixture. Turn on the steamer and swirl about until the eggs are scrambled but still a bit soft and runny. It works best if you swirl from the edges, then do the centre of the mixture as it firms up.
