Ooh thanks Daff, pancakes were a possible for the menu for tomorrow...but yumm...now they are a definite! I have to try some of these.

Indeed. In my former home state of Kansas they have the International Pancake Day Pancake Race between the towns of Liberal, Kansas and Olney, England.

I use the Bob's Red Mill gluten free pancake mix, and it's wonderful! Actually, pancakes have become a very important part of my gluten-free existence. It's the only "bready" thing that I can make a substitute for and it tastes like the real thing. With real maple syrup, some crispy bacon, a big bowl of whatever fruit we've got around, and it smells like Sunday.

I do occasionally have corn & ricotta hotcakes for breakfast at one of our favourite cafs because they're so hard to resist (served with bacon, rocket and corn relish - mmmmMMMMM!), but I sometimes pay the price next day.

Ingredients for pancakes? Flour, eggs, milk. My top 3 intolerances? Eggs, dairy, gluten :lol:

(I haven't seen Bob's Red Mill products here but of course there are alternatives.)

Bob's Red Mill, the recipe on the packet says you can substitute soy milk or almond milk, no problem, but I've never tried it because as yet my lactose intolerance only applies to milk if I drink it or ice cream, so I can still cook with it. As for the egg ... I know there are things like egg beaters, but are they for making a scramble or can you add them to recipes?

Nobody to make pancakes for today so I'll just shift P Day to tomorrow. Thin, a bit lacy at the edges with a good squeeze of lemon and a tiny amount of sugar..oh yes.

There's a whole difference when it coems to British pancakes and American pancakes.

however, there's a vegitarian indian that do nice dosais!

Have you tried "tattie (potato) scones"? (Scottish "delicacy" so Mr Crom may have a recipe if google doesn't).

My local butcher sells them and they look like thick chapatis/wraps.

Hmm, it would seem I've messed up. Should have planned on potato pancakes for dinner tonight. Maybe tomorrow given tonight's dinner is already beyond the prepping stage.
